With a huge thank you again to our hosts Andy and Michelle, we’d like to show off a few of the excellent meals they cooked during our visit.
Fresh Seafood Feast
First up was a full baked Snapper, covered with an asian-inspired sauce. We pulled the fish right off the bones to eat.
Bonus – as an appetizer for this meal, Andy made Oysters Kilpatrick (Bacon & Worcestershire Sauce). This being Australia, all seafood was fresh as can be!
Camp Oven Dinner
Next up was a whole chicken, along with some potatoes and broccoli. The cool thing about this meal, however, was the cooking method. Andy built a fire early in the day, then once the coals built up (4+ hours and an afternoon nap later) dinner went into some cast iron pots and was buried in coals to cook. Kaitlin took some great videos of the process – enjoy some guitar and Aussie accents for extra effect!
In an attempt to reciprocate the hospitality, we did cook some meals for them during our stay. Particularly during the crazy 5-day rainstorm when we were stuck inside. We cooked some favorites of ours from the USA – chili, falafel, kimchi fried rice, tacos, and tortilla soup. Particular hits were the Mexican recipes – they do not get Mexican food in Australia anywhere close to what we have in the States. No pictures of our meals, but here’s Clint cooking one up!
